Baked Mediterranean Eggs

Feeling for something super tasty, healthy and delicious? This Baked Mediterranean Eggs dish is just for you! I traveled to Israel a couple of years ago and was served this epic dish for breakfast. I was a bit unsure as I was not really a fan of baked eggs but this dish was game changing!

This gorgeous dish is super quick, easy and is great for breakfast, lunch, dinner or even midnight munchies.

Ingredients all purchased in: Massy Stores


2 Large Eggs

1 tbs Crumbled Feta

½ Finely Sliced Yellow Pepper

½ Finely Sliced Red Pepper

200 G Diced Tomatoes

1 Handful Spinach

1 tsp Geera

1 tsp Salt

1 tsp Black Pepper

1 tsp Smoked Paprika

1 tsp Red Chilli Flakes

3 sprigs Coriander

3 sprigs Parsley

Extra Toppings to jazz it up: Chorizo, Smoked Salmon and Tofu.


  1. Add diced Tomatoes, Spinach, Peppers to sauce pan and bring to gentle simmer.
  2. Once simmering add the Geera, half of the Salt, Pepper, Smoked Paprika, stir together and leave covered to simmer for 10 minutes on a gentle simmer.
  3. Preheat the oven to 350 degrees while your vegetables and spices cook with love. Taste and season throughout to your taste.
  4. In two separate bowls, separate your eggs.
  5. Transfer your veggies into a baking dish, create a hole for the eggs on opposite sides and pour the eggs into the holes. (1 egg in each hole).
  6. Bake for 25 mins until eggs are firm.
  7. Once cooked, finish with chopped Coriander, Parsley, Pepper, Crumbled Feta and Red Chili flakes. Yummy!
